#635 Lamb Koftas, Tzatziki and Coriander & Lime Pesto






















For two people:
200 - 300g  minced lamb

small onion, grated
small piece fresh ginger, grated
handful fresh coriander, chopped finely
handful fresh mint, chopped finely


some red chill
 powder
1 tsp ground cumin
1 tsp  ground coriander

One free range egg

Method
Mix everything together, mold into burgers, refrigerate.

Cook
Optional dust with flour or better still Gram flour
Fry couple of minutes each side
Then put frying pan in 200c oven for 12 minutes or so
Done.

Serve with:
Tzatziki 
Diced cucumber and mint in Greek yogurt.

60 g toasted pine nuts

30 g fresh coriander including stalks

spring onion, chopped roughly

clove garlic

about 120 ml extra virgin olive oil

One lime zested and juiced

zest of lemon (optional)

Blend it all with a stick blender .

handful coriander leaves, chopped finely
1-2 large red chill chopped finely
1 tsp red chilli flakes (optional)
1 t ground cumin
1 t ground coriander powder
4 T dried breadcrumbs
1 large free range egg
salt, to taste
